In order to finish the process, sugar cane syrup is subject to a final concentration stage under an innovative vacuum system to reach a crystallization point under low temperatures, which ensures a characteristic and unique color and flavor for our whole cane sugar. Once the special crystallization conditions are achieved by the "sugar conoceur", the syrup is poured into special stainless steel tanks, where hand labor give the final touch to transform it into whole cane sugar. This type of sugar contains all the original nutrients of sugarcane such as vitamins, minerals and polyphenols or antioxidants, due to the fact that this nutrients are not subject to separation by centrifugation, as it is common with most crystallized sugars that are refined and processed.
